Brussel Sprout and Basil Bowtie Pasta Dinner

I love this super easy and quick to make healthy meal, from Good Housekeeping, it tastes like summer to me!   This would be a great dish to serve at an outdoor BBQ or your Fourth of July gathering.   If you are gluten and/or dairy free, like me,  simply substitute in GF pasta and/or omit the cheese.  You could also add a protein like chicken or beef which would pair well with this recipe.  Here are the ingredients for the Brussel Sprout and Basil Bowtie Pasta Dinner:

1/4 cup EVOO

1/2 tsp salt

3 cloves finely chopped garlic

1/2 lb sliced mushrooms (any variety)

1/2 lb chopped brussel sprouts

1 tsp finely chopped rosemary

1 lb cooked bowtie pasta

1/4 cup shredded cheese (any variety)

Garnish: juice from 1 lemon + basil leaves + black pepper

 

Boil pasta according to package and reserve a 1/2 cup of pasta water aside.  In a 12 in skillet, heat 1/4 cup EVOO and chopped garlic on medium heat for 3 minutes stirring constantly.  Add 1/2 tsp salt and mushrooms and brussel sprouts.  Cook 5-7 minutes or until almost tender.  Add fresh rosemary and cook 2-3 minutes more or until wilted.  Toss cooked pasta with 1/2 cup of pasta water and veggie blend in another bowl.  Add your shredded cheese and add juice of one lemon and basil leaves as a garnish.  So Easy!  Serve immediately.   Let me know if you try this recipe and what you thought!
